Products From the BOVINE to the BANANA SPLIT... 
Or from the COW to the CONE, if you prefer!
From the cow, the milk flows through a pipeline to a tank where it is cooled to 38 degrees. The milk is processed by the dairymen. the milk is heated to 170 degrees and held at that temperature for 17 seconds. This is called pasteurization. some milk is bottled this way, it is called pasteurized milk. some people call it “cream top” because the cream rises to the top of the bottle.

The next process is called separating because in this process the milk is separated from the cream. skim milk is bottled this way. Whole milk, 1% low fat and cream continue through the system to be homogenized.
During homogenization, the product is put under 2000 pounds of pressure which breaks up and distributes the butterfat in the cream.

A lot of the milk and cream are sold in our ice cream shops or in the dairy store at the whitman location, but most of the cream and milk is used to make ice cream mix.
Ice cream mix is a wonderful blend of cream, milk, natural stabilizer, sugar and the other natural ingredients that is the base for our ice cream - just one of the many reasons our ice cream tastes so good.

As the ice cream mix is whipped and frozen in an Emery Thompson batch freezer, only the freshest, natural ingredients are added. vanilla is made with pure vanilla extract, we use pistachio nuts in the pistachio ice cream, and banana is made with fresh bananas - more than 1/2 pound per gallon. strawberry ice cream is made with fresh frozen northwest berries.
We don’t stop with the ice cream, either. several years ago, dissatisfied with the commercial brands of hot fudge on the market, we explored the possibility of making our own fudge. much to our surprise we discovered that hot fudge was loaded with hydrogenated coconut oil and other unhealthy ingredients to thicken the product. through trial and error we developed a delicious hot fudge. It is not thick - we refuse to use the unhealthy ingredients - but it is bursting with delicious chocolate flavor. We also make our own chocolate flavorings and chocolate syrup.

Soooo.... if you take a perfectly ripened banana, a scoop of vanilla, chocolate and strawberry, some hot fudge, northwest strawberries, and crushed pineapple, add our own whipped cream, a special blend of mixed nuts and a cherry, you have a delicious banana split.
